Growing up, my sister and I spent half our lives dancing, twirling the baton, playing the piano, going to musical theater practice, traveling to competitions and so on and so forth. Needless to say, sitting down to a family-style dinner was not the norm. To give my mom credit, she cooked amazing from-scratch meals when we were home, but some weeks we weren’t home before 7:00 or 8:00 in the evening. On those days, we often stuck a TV dinner in the microwave and gobbled it up with an apple or some baby carrots on the side. The sweet thing is, when I look back upon pictures like the one of my sis and I at dance camp, I smile thinking of all the experiences we had. All those TV dinners were well worth the artistic world we were exposed to.
Fast-forward 30 years and now, instead of a little girl eating on the go, I’m a mom to two little boys ensuring they eat a healthy dinner each evening. Because they are not yet involved in a bulk of afternoon and evening activities, we are usually able to cook a meal from scratch, but when that’s not the case, I like to have some back-up frozen meals in the freezer. If you’re anything like me, finding anything that simplifies life is greatly appreciate. There are only a few brands that I like. Richard’s Cajun Foods is one of them. And don’t worry, even though the word “Cajun” is in the brand’s title, these foods are not overly spicy.
Richard’s is a family-owned company out of Louisiana that only recently brought their flavorful, Cajun-style products to my state of North Carolina. The company makes a number of products, including single-serve bowls, sausages, breakfast meals and other items. I often use their sausage when making a big meal for multiple people but today, I am focusing on their frozen options. Richard’s single-serve bowls are perfect for a quick lunch or dinner. I’ve eaten these several times while at work. It’s a great portion size to alleviate hunger but no over-stuff. I do not like eating too much food at lunch because then I find it impossible to find the energy to keep working.
The company also offers larger, family-size frozen meals. These are great when the entire family needs a quick meal. Richard’s Cajun Foods offers a lot of sausage-based items and while the boys in my family love sausage, I’m not a huge meat eater. I do, however, love fish, so my favorite Richard’s meal is the Shrimp Etouffe′.

That looks pretty darn good. I looked at their website and I see they have a nice looking breakfast selection too! The Red Beans and sausage would be something my family would like to try too.
