Muffin Tin Frittatas

Delicous muffin tin frittatas! These mini-frittatas are easy-to-make and absolutely delicious. #breakfast #recipes @zealousmom.com

Breakfast can be the most boring or the most exciting meal of the day. In our family, we often opt for fruit and yogurt smoothies, cereal, scrambled eggs, or cheese grits. It’s a goal of mine to be more creative with this very important meal.

A frittata is similar to an omelet, but all of the ingredients are mixed up together and cream is typically added to make it fluffy. This Muffin Tin Frittata recipe is super easy and absolutely delicious!

Ingredients

  • 6 large eggs
  • 1/4 cup half-n-half
  • 1/2 teaspoon salt
  • Grated cheeses (Parmesan, feta, cheddar, etc.)
  • Assorted fillings (bacon, spinach, onions, tomatoes, ham, asparagus, etc.)

Directions

1. Heat your oven to 350 and allow it to preheat as you prepare your mini-frittatas

2. Coat your muffin tin with non-stick cooking spray

3. Whisk the eggs, half-n-half, and salt in a medium-sized bowl

4. Pour the egg mixtre evenly into the muffin tips; fill about halfway

5. Sprinkle in ingredients (this is the beauty of mini-frittatas; each family member can select exactly what they want in theirs)

6. Bake for 25 minutes

7. Scoop out with spoon or butter knife, and serve with a side of fruit

8. Enjoy!

    I love muffin tin recipes like this. They’re always so fun and good for “on the go” type breakfasts or snacks. I think my husband would love them too!

    I love portion controlled recipes. I’d be a good girl and only eat one. If it was all in one piece, I’d eat more at a time. This looks delicious!

    How simple and I bet they taste awesome. I love things like this for breakfast – especially on days when I am going to workout in the morning because then I don’t end up hungry half way through the class.

    I love making yummy recipes with muffin tins. Last week I made a sausage egg cup topped with cheese. It was delicious. I am going to have to try this recipe too! It’s like an mini omelet ๐Ÿ™‚ YUMMY

    I love making friatta’s; but I need to make them in muffin tins next time! My son is always more likely to eat something if it is in the form of a muffin!

    I’ve been meaning to try something like this for a while now!! Tonight is breakfast for dinner (something I’ve implemented for the sake of the budget) and i think I just found what we’re eating!!…thanks for this…this’ll definitely mix things up from the standard egg presentation they’ve grown accustomed to seeing! Lol
